In order to take advantage of functionalities of pulse ingredients, it is of prime importance to understand the raw materials and choose the right products. In addition to dozens of different types of pulses, which can provide different flavor, color and texture to end product, there are varieties of ingredients on each pulse including whole and split flour, and each produces raw flour, pre-gelatinized flour, flakes, grits, and fractionated products.
